One minute it’s there, the next it’s gone. Fairmont Hotels & Resorts has introduced a new 'Disappearing Bar' concept – a roving pop-up bar that appears briefly in unexpected spaces before vanishing to its next destination.

The series kicks off this September at Fairmont Royal York in Toronto, with Grey Goose Vodka as partner. Guests will need to find their way to a hidden rooftop space, usually closed to the public, where they will be greeted by sweeping views beneath the glow of the hotel’s iconic neon red sign.

This limited-time, 60-minute experience is capped at just 20 guests and will feature handcrafted Grey Goose martinis, dessert bites, live music, skyline views and sound by Fairmont’s new partner Devialet. Dates are set for 17, 18, 24 and 25 September, with two evening sittings each night. Tickets are priced at CAD$96++ (US$70++) via Eventbrite, a nod to the hotel’s 96-year history.

Once Toronto’s curtain call ends, the Disappearing Bar will pack up its martini shakers and re-emerge in other Fairmont properties including The Savoy in London, Fairmont The Palm in Dubai and the pre-opening Fairmont New Orleans.
